Carbohydrate restriction helps reduce acne

This post includes a summary of a paper published in the Ulster Medical Journal 1940 April; 9(1): 39–43 and a recipe for turkey meatballs.

The author states: "It has been shown that carbohydrate in large quantity has a hydrating effect on the skin which encourages infective processes, and certainly the majority of cases of acne take a high carbohydrate diet"

He then recommends, "Carbohydrate should be restricted, especially white bread, cakes, pastries, chocolate, and cane sugar, all of which tend to promote fermentative processes in the intestine"

Turkey Meatballs

Ingredients:
1 lb. ground organic turkey meat
1 small onion, minced
3 garlic cloves, minced
Kosher.com - Glatt Kosher Ground Turkey (White Meat)
Food Mall: Ground Turkey
1 large egg
3 tablespoons ketchup
3 tablespoons olive oil

Instructions:
In a medium bowl, mix together onion, garlic, egg, and ketchup. Add turkey meat and mash mixture with hands. When well-mixed, form 1-inch diameter meatballs and set aside on a cookie or baking sheet. Wash hands thoroughly before moving on.

Over a medium-heat skillet, heat oil. Transfer meatballs to skillet and cook until brown on all sides. When cooked, drain excess oil, transfer to plate, and serve.

Lowering the carbohydrate content of the diet leads to improvements in acne

The study compared the effect of an experimental low glycemic-load diet with a conventional high glycemic-load diet on acne.
 
It found that patients on a low glycemic-load diet had 8.1% fewer acne lesions than the patients on the high glycemic-load diet.

Recipe of the day

Lamb Noisettes with Lemon and Rosemary Jus
 
Ingredients:
4 lamb noisettes, loin chops or valentine steaks
Loin Lamb Chops
Food Mall: Loin Lamb Chops
60ml/4tbsp extra virgin olive oil
1 large sprig fresh rosemary, snipped
15-30ml/1-2tbsp cider vinegar
Grated zest of 1 lemon
Juice of ½ lemon
Salt and freshly milled black pepper

Watercress and Pink Grapefruit Salad:
2 x 85g packs fresh watercress or 2 large bunches, trimmed
2 pink grapefruits, peeled and segmented
1 small bunch freshly chopped chives

For the Vinaigrette dressing:
45ml/3tbsp olive oil
15ml/1tbsp white wine vinegar

Method:
1.Place the noisettes into a large shallow dish. Mix together 3 tbsp olive oil, rosemary, cider vinegar, and lemon zest and juice. Season and pour over the noisettes. Cover and refrigerate for 2-3 hours.

2.Preheat the oven to Gas Mark 6, 200°C, 400°F.

3.Heat the remaining oil in a large pan, remove the lamb from the marinade (reserve for later) and sear for 2-3 minutes, turning once until brown on both sides.

4.Transfer to a hot roasting tin, add a little of the marinade mixture and cook for a further 8-10 minutes according to how pink you like your lamb.

5.Place the salad ingredients into a large salad bowl. Place the dressing ingredients into a screw-topped jar, season and shake until combined. Pour over the salad.

6.Arrange the noisettes onto a plate, garnish with extra rosemary and spoon over the jus from the roasting tin.

High carbohydrate diets lead to an increase in acne

The authors looked at the effect of low-glycemic-load diets on acne risk.
 
They found that subjects on the low-glycemic diet had a lower amount of mono-unsaturated fatty acids and a higher amount of saturated fatty acids in the oil on their skin, than did the subjects eating the high-glycemic diet, and therefore their skin produced less oil, and they had less acne lesions.

Recipe of the day

Cioppino

Ingredients:
Fresh Large Shrimp, 2 Pounds
Food Mall: Large Shrimp
3/4 cup butter
2 onions, chopped
2 cloves garlic, minced
1 bunch fresh parsley, chopped
2 (14.5 ounce) cans stewed tomatoes
2 (14.5 ounce) cans chicken broth
2 bay leaves
1 tablespoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 cup water
1 1/2 cups white wine
1 1/2 pounds large shrimp - peeled and deveined
1 1/2 pounds bay scallops
18 small clams
18 mussels, cleaned and debearded
1 1/2 cups crabmeat
1 1/2 pounds cod fillets, cubed

Directions:
1.Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.

2.Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.

3.Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls.
